Southwestern Chicken Salad in Avocado Bowls

Prep Time 15 mins / Serves 4

Shopping List
2 cups cooked chicken, shredded
2⁄3 cup sour cream
3 tablespoons chunky salsa
1 tablespoon fresh chopped cilantro
1 teaspoon lime juice
2 avocados

1. Fold chicken, sour cream, salsa, cilantro, and lime juice together in a large bowl, shredding chicken with a fork until your desired consistency is reached.

2. Cover and refrigerate chicken salad for 30 minutes for the ingredients and flavors to mingle, or skip to the next step to serve immediately.

3. When you are ready to serve, slice the avocados in half lengthwise and remove the pit. Use each half as a serving bowl for 1 person, stuffing chicken salad into the empty pit cavity and then mounding heaping spoonfuls over top of the entire surface of the avocado half. Serve garnished with fresh cilantro.

George’s Tips | When shopping, look for a chunky salsa without any added sugar or corn syrup in the ingredients list. I’ve found that Pace’s Chunky Salsa does not add sugar and they should be readily available in any grocery store.

Variation | Give the salad more texture by adding 2 tablespoons of diced green bell pepper or a few teaspoons of diced jalapeño pepper, if you like spice. You can also serve topped with shredded Cheddar jack cheese and chopped bacon for even more great flavors!

Gleeuary News! Glee Has Released The Midseason Poster And It’s Epic!

The winter hiatus is almost over, and fans of Glee have been eagerly been waiting for any shred of information about the upcoming episodes. As Gleeuary approaches, all the spoilers and tidbits are just making us more and more excited, and now we’ve finally got something to look at!

Finally we have the exclusive midseason poster featuring none other than Lea Michele and Chris Colfer. Not only do we get to see arguably the two fan favorites, but they both look absolutely gorgeous.

“This is going to be epic!” is the proclamation, next to an enthusiastic looking Michele and an equally happy Colfer. Let’s hope this is a sign of an unforgettable run of episodes! Don’t forget – Glee returns February 25 at 8pm.

CFR vaccine preventable diseases mapIf you follow the problem of vaccine denialism (like most skeptics do) and are on social media, you probably saw a cool interactive global map of disease outbreaks this week. It was created by the Council on Foreign Relations – there’s a picture of it here and a link below the fold.  

Just in the last week it was posted by many major websites including Kottke.org, Mother Jones, L.A. Times, The Verge, Wired, The Atlantic Wire and even Forbes. And of course all those posts – and the direct link to the map – were being wildly passed around on social media.
